Seafood Salad
Seafood salads are tasty and healthy options and can be whipped up in minutes. Serve them chilled or dunked in between toasted burgers. Work with a variety of herbs, dressings and seasonings. Freshly cut garden greens, tomatoes, cucumbers and fresh fruits such as grapes or melon slices go well with seafood salads.
Seafood Salad Recipe
Prawn and Prosciutto Salad Recipe
2 fillet of flathead
4 King prawns, peeled
2 slices of prosciutto
virgin olive oil
herb or champagne vinegar
1 tbsp pine nuts
10 small black olives
4 parsley leaves
½ a cucumber sliced
2 stalks of celery sliced
4 radishes sliced
1 chilli sliced
lemon juice
Salt and freshly ground black pepper. Wrap the flat head fillets in the prosciutto with parsley. Fry them in little olive oil till just done. Prepare the salad dressing and toss the vegetables. Place the fillets on top. Garnish with fried olives and pine nuts. Douse with vinegar.
Thai Squid Salad Recipe
Poached squid, prawn meat, scallops
Carrots, radish, capsicum, celery, spring onions, lettuce leaves
Oyster sauce
Lemon juice
Grated ginger
Chopped garlic
Chopped lemon grass, coriander, chili, mint leaves
Blend together the dressing. Julienne the vegetables and add chopped garden greens. Mix with seafood and dressing. Serve on a bed of crisp lettuce leaves and watercress. Serve with garlic bread and hot stew.
Seafood Pasta Salad Recipe
Whip up a tasty seafood pasta salad with shrimps or lobsters and elbow macaroni. Prepare salad dressing with mayonnaise, sour cream, lemon juice, dry mustard, Tabasco sauce, paprika and capers. Toss along with sliced celery and diced cucumbers and salad greens.
Seafood Pasta Salad
Ingredients - Mixed seafood, pasta shells, parsley sprigs, green onions, chopped celery and fresh dill. Blend the seasoning together with lemon juice, wine vinegar, paprika, garlic powder, salt, sugar and olive oil. Season the seafood with part of the marinade for a few minutes. Cook pasta till just done. Add onions, parsley, dill, celery and remaining dressing and mix well. Mix the seasoned seafood and toss. Refrigerate and served on a bed of salad greens.
Make an exciting seafood pasta salad with seashell macaroni and Italian salad dressing. Use white tuna, shrimp and crab combination. Add diced cucumber, tomatoes, onions, green pepper and celery along with cooked and drained macaroni. Combine with mustard, dill and mayonnaise and toss.
